 4 tsp Teeny Tiny Spice Company Organic West African Curry
 1 Lime, juiced
 1 ¼ tsp Salt
 2 lbs Primal Pastures chicken breast
 ½ Medium apple, diced
 2 Celery ribs, diced
 2 tbsp Red onion, finely diced
 ½ cup Raisins

Preheat oven to 500F

Dice chicken breast and place in medium sized bowl. Add avocado oil, salt and 3 tsp. curry spice and mix well

Place chicken in roasting pan and cook for 15 min or until cooked through

Meanwhile, in a medium sized bowl mix together the mayo, 1 tsp. curry powder, lime juice and ¼ tsp salt.

Next add the cooked chicken, diced apple, celery, raisins and onions until well combined.

Serve in a lettuce wraps
