Coconut-Lemon Macaroons

 1 ½ cups Unsweetened Shredded Coconut
 ½ cup Otto’s Cassava Flour
 ½ cup Date Lady Date Syrup
 2 tbsp Raw Revelations Coconut oil, Melted
 1 tsp Vanilla Bean Powder
 ¼ tsp Salt
 1 Lemon, Zested and Juiced

Preheat oven to 325F

Mix all ingredients in a bowl until well combined.

Scoop 2 tablespoons of the mixture onto a baking sheet lined with parchment paper.

Bake for approximately 20 minutes. The bottoms of the macaroons will begin to brown when finished.

Cool macaroons on the baking sheet for at least 15 minutes to avoid them falling apart
