In a large deep skillet or frying pan over medium heat add avocado oil.

Add tomato, zucchini, onions, garlic, and bell peppers; Hot Italian Spice, salt and pepper. Stir and cook until onions are translucent (about 10-12 minutes).

Make 4 opening for the eggs in the vegetables

Crack an egg one at a time into each of the 4 spots.

Cover pan and turn heat down to low and simmer for about 5 minutes, or until eggs are cooked as you desire.
